Chia Raspberry Parfait

Creamy, high-protein and lightly malted, this yoghurt chia parfait layers thick raspberry compote with a protein-packed chia yogurt for the easiest, most delicious snack or after dinner treat.

10 min (+ 1 hour chill time )

Ingredients
  • 2 cups Greek yogurt

  • 1 scoop vanilla protein powder*

  • 4 tbsp chia seeds

  • 2 tbsp Saunders' Malt Extract

  • 2 cups frozen raspberries

  • Fresh raspberries (optional)

Method
  1. Make the raspberry compote by heating the frozen raspberries in a small pan until they soften and release their juices. Lightly mash and let cool.

  2. In a bowl, mix the Greek yoghurt, protein powder*, chia seeds and Saunders' Malt Extract until smooth and creamy.

  3. Layer the parfait by spooning raspberry compote into the base of each glass, followed by the yoghurt mixture. Repeat layering raspberry compote and yoghurt until the glass is full.

  4. Place in the fridge to chill for at least 1 hour. 

  5. When ready to serve, top with granola, crushed nuts, or fresh raspberries. 


Tip:

You can switch this up with any flavour combo,  blueberries, mango, mixed berries, or even a chocolate protein version.

*We used Happy Way vanilla protein powder, but you can use any good quality protein powder.
