Chicken Burger with Malted Bacon Jam and Brie



Enjoy the full flavour of a malted bacon jam as the finishing touch to your fancy chicken burger - simply mouthwatering.

Ingredients
4 brioche buns, toasted
4 chicken thighs, grilled with salt and pepper
4–5 red onions, thinly sliced
250g streaky bacon, chopped
50ml Saunders’ Malt Extract
20ml water
Brie cheese, sliced
Rocket for serving
Method
Grill the chicken thighs until golden and cooked through. Set aside.
In a pan, cook the bacon until crisp. Remove and set aside.
In the same pan, sauté the onions until translucent and soft.
Add the cooked bacon back in, along with the Saunders’ Malt Extract and water. Simmer over low heat until a thick, jammy consistency forms (approx. 10–15 minutes).
To assemble the burgers: layer rocket, grilled chicken, sliced brie, and a generous spoonful of malted bacon jam on each toasted brioche bun.
