Chicken Gyros with Spicy Malt Marinade

Ingredients
500g chicken breast fillets
2 tbsp olive oil
2 cloves garlic, minced
1 tsp paprika
1 tsp cumin
½ tsp chilli powder
1 tbsp Saunders’ Malt Extract
For Serving
Flatbreads, warmed
Tzatziki
Pickled onions
Tomato slices
Cucumber slices
Rocket
Fresh dill
Method
In a bowl, whisk together olive oil, garlic, paprika, cumin, chilli powder, and Saunders’ Malt Extract to make the marinade.
Coat chicken thoroughly, cover, and marinate for at least 2 hours (overnight for best results).
Grill chicken until cooked through and slightly charred.
Slice chicken and serve in warm flatbreads with tzatziki, rocket, tomato, cucumbers, pickled onions, and fresh dill.
