Malt Baked Apples

Sweet baked apples are topped with a golden malt and nut crumble, creating a simple dessert that's full of warmth, flavour and texture.

Ingredients
  • 4 apples, halved and cored

  • ½ cup chopped nuts

  • 2–3 tbsp Saunders' Malt Extract

  • ½ cup brown sugar

  • 75g butter, melted

  • 1 tsp cinnamon

  • 2 tsp cornflour

  • ¾ cup water

To serve (optional):

  • Vanilla ice cream

  • Extra Saunders' Malt Extract, for drizzling

Method
  1. Preheat oven to 180°C (160°C fan-forced).

  2. Halve and core each apple.

  3. In a medium bowl, melt the butter in the microwave. Add the chopped nuts, brown sugar, cinnamon and Saunders' Malt Extract. Mix until well combined and crumbly.

  4. Place the apples in a lightly greased baking dish and spoon the mixture into each cavity, pressing it in lightly.

  5. Mix the cornflour with 2 tablespoons of the water until smooth. Stir in the remaining water and pour into the base of the baking dish.

  6. Cover with foil and bake for 20 minutes. Remove the foil and bake for a further 20 minutes, or until the apples are tender and the topping is golden.

  7. Transfer the baked apples to individual serving bowls. Top each with a generous scoop of vanilla ice cream and finish with a drizzle of Saunders' Malt Extract. Serve immediately.


Tip: Swap the chopped nuts for rolled oats for a softer crumble topping, or serve with warm custard or cream instead of ice cream.
