Malt Orange Glazed Chicken

A fresh take on orange chicken, this recipe combines golden chicken pieces with broccolini, onion and garlic in a soy, orange and malt sauce. Serve with rice for an easy weeknight meal with a lovely balance of savoury, citrus and sweetness.

Ingredients
  • 4 chicken breasts, cut into bite-sized pieces

  • ¼ cup cornflour

  • 1 tbsp olive oil

  • 1 medium brown onion, sliced

  • 2 bunches broccolini, chopped

  • 3 cloves garlic, minced

  • ½ cup fresh orange juice

  • ¼ cup soy sauce

  • ¼ cup Saunders’ Malt Extract 

Method
  1. Place the chicken pieces in a bowl or bag and coat lightly with cornflour.

  2. Heat olive oil in a large frying pan over medium-high heat. Add the chicken and cook for 6–8 minutes, turning occasionally, until golden and cooked through. Remove and set aside. 

  3. In the same pan, add the onion and broccolini. Cook for 3–4 minutes until the onion is slightly softened and lightly coloured.

  4. Add the garlic and cook for 30 seconds until fragrant.

  5. Pour in the orange juice, soy sauce, and Saunders’ Malt, stirring to combine. Return the chicken to the pan and toss through the sauce.

  6. Allow the sauce to simmer for 3–5 minutes, stirring occasionally, until thickened and glossy, coating the chicken and vegetables evenly.

  7. Serve immediately with rice or your favourite sides.


Tip: allow the chicken to cook to a deep golden colour before removing from the pan. This helps create a crispier coating while also adding a rich, caramelised flavour to the dish.
