15 minutes (+ 25-30 minutes cook time)

Ingredients

Brownie:

  • 150g unsalted butter

  • 150g dark chocolate, chopped

  • ¾ cup caster sugar

  • 2 eggs

  • 3 tbsp Saunders’ Malt Extract

  • ¾ cup plain flour

  • Pinch of salt

Topping:

  • 200g dark chocolate, chopped

  • 100ml thickened cream

  • 150g Maltesers, roughly chopped

Method

Method

  1. Preheat the oven to 180°C (160°C fan-forced) and line a square baking tin.

  2. Melt the butter and dark chocolate together in a heatproof bowl over simmering water or in the microwave, stirring until smooth.

  3. Gradually stir in the sugar until combined, then add the eggs one at a time, mixing well after each addition.

  4. Add the Saunders’ Malt Extract and stir until combined fully.

  5. Gently fold in the flour and salt until just combined - do not overmix.

  6. Pour the batter into the prepared tin and smooth the surface.

  7. Bake for 20–25 minutes, or until the edges are set but the centre remains slightly soft.

  8. While the brownies are still slightly warm, heat the thickened cream in the microwave until just boiling. Pour it over the chopped dark chocolate and let it sit for 1–2 minutes, then stir until smooth and glossy.

  9. Spread the chocolate topping evenly over the brownies, then sprinkle with the chopped Maltesers.

  10. Allow to cool before slicing for clean edges, or serve warm for a fudgier texture.

Tip:  Serve warm with a generous scoop of vanilla ice cream for an easy indulgent dessert.
