Malted Ice Cream Sandwiches

These malted ice cream sandwiches are an easy, no-bake treat made with classic Malt ‘O’ Milk biscuits and a creamy malt-infused ice cream filling. Finished with a white chocolate dip and Caramilk drizzle, they’re a simple but impressive dessert that’s perfect for prepping ahead.

15 minutes (+ 4-6 hours chill time)

Ingredients
  • 450ml thickened cream

  • 120g condensed milk

  • 1 scoop white chocolate caramel protein powder

  • 2 tbsp Saunders’ Malt Extract 

  • 24 Malt ‘O’ Milk biscuits

  • 225g white chocolate melts

  • 60g Caramilk chocolate

Method
  1. In a large bowl, combine the cream, condensed milk, protein powder, and Saunders’ Malt Extract and whip until soft peaks form.

  2. Line a baking dish with baking paper. Arrange half of the Malt ‘O’ Milk biscuits side-by-side, facing down, to form the base.

  3. Spread the ice cream mixture evenly over the biscuit layer, then place remaining biscuits on top, pressing down gently.

  4. Freeze for 4–6 hours, or until fully set.

  5. Once firm, remove from the freezer and cut into sandwich-sized pieces (using the biscuits as a guide).

  6. In a small bowl, melt the white chocolate. Dip one end of each sandwich into the white chocolate then place on a clean tray.  While the white chocolate dip cools, melt the Caramilk then drizzle over each sandwich. 

  7. Enjoy immediately or wrap individually and store in the freezer for up to 4 weeks. 


Note: We used white choc caramel protein powder, but caramel, white choc or vanilla will work just as well.
