Peanut Butter Caramel Dates

Savour the rich and sticky caramel flavour of medjool dates, the creamy peanut butter and the subtle crunch of crushed peanuts. It’s a sensory delight!

Preparation Time: 

15 minutes (+ 30minutes chill time – optional for setting)

Ingredients
  • 10–12 Medjool dates, pitted and gently flattened

  • 1 cup all-natural peanut butter (or nut butter of choice)

  • ¼ cup Vanilla Whey Protein Powder

  • 2 tbsp Saunders’ Malt Extract

  • Splash of almond milk (to loosen texture)

  • 100g dark or milk chocolate, melted

  • Crushed peanuts, for topping

Method
  1. In a small mixing bowl, combine peanut butter, protein powder, Saunders’ Malt Extract, and a splash of almond milk. Stir until smooth and spreadable — adjust the milk if needed for consistency.

  2. Flatten each pitted Medjool date and arrange them on a lined tray.

  3. Spoon the peanut butter caramel mixture onto each date, spreading evenly.

  4. Drizzle melted chocolate over the top of each date, then sprinkle with crushed peanuts.

  5. Place in the fridge or freezer to set for 20–30 minutes.

  6. Enjoy immediately or store in an airtight container in the fridge for a quick, high-protein sweet treat throughout the week.


Note *You may need to adjust the amount of almond milk depending on your peanut butter. Natural nut butters tend to be runnier and blend more easily, while processed ones may need a little extra milk to create a smooth, spreadable consistency.
