Protein Muesli Bars

These malted muesli bars are lower in sugar, boosted with vanilla protein, and sweetened with Saunders Malt for that warm caramel flavour. They’re nut-free, chewy, and perfect for school snacks.

Ingredients
  • 3 cups rolled oats

  • 1 cup rice bubbles

  • ½ cup desiccated coconut

  • ½ cup vanilla protein powder

  • ¼ cup chocolate chips (optional)

  • ¼ cup butter or coconut oil, melted

  • ½ cup Saunders’ Malt Extract 

  • 2 tbsp brown sugar

  • 1 tsp vanilla

  • ¼ tsp salt

Method
  1. Preheat the oven to 170°C and line a slice tray with baking paper. Combine oats, rice bubbles, coconut and vanilla protein in a large bowl.

  2. In a small saucepan, warm the butter or coconut oil,  Saunders’ Malt Extract, brown sugar, vanilla and salt until smooth and gently bubbling. 

  3. Pour the warm malt mixture over the dry ingredients and mix well. Fold in chocolate chips if using.

  4. Press the mixture very firmly into the tray —  really compact it down so the bars hold together after baking.

  5. Bake for 15–18 minutes or until lightly golden. 

  6. Cool completely before slicing



Tip: For a chewier bar, underbake slightly. For a firmer bar, press the mixture into the tray while still warm using a flat metal spatula.
