Roasted Brie & Blackberry Malt Crostini

A sweet and savoury Christmas starter — creamy brie with roasted blackberries, malt glaze, and a touch of fresh thyme.

Ingredients

1 baguette, sliced

1 wheel brie, sliced

1 cup blackberries

½ cup blackberries (for garnish)

2 tbsp Saunders’ Malt Extract

1 tbsp balsamic vinegar

1 tbsp fresh thyme leaves, plus extra sprigs to garnish

Sea salt flakes, to taste

Method

Preheat oven to 180°C.

Arrange the sliced baguette on a tray, top each piece with brie, and bake for 5–7 minutes until the bread is toasted and the brie is warm and soft.

Combine the blackberries, Malt Extract, balsamic vinegar and thyme in a small pan. Cook over medium heat, gently smashing the berries as they soften, and simmer for 3–5 minutes until thick and syrupy.

Spoon the warm compote over each brie crostini, then top with a fresh blackberry, a thyme sprig and a pinch of sea salt.

Serve the crostini warm, the brie melts perfectly and the malt flavour really comes through.
