Single Serve Chocolate Protein Cake

Warm, rich and ready in minutes, this single-serve malted chocolate protein cake is the perfect quick treat. A soft, gooey centre meets chocolatey crunch for an easy, satisfying dessert-for-one.

Preparation Time: 

5 minutes (+ 2 minutes cook time)

Ingredients

2 tbsp plain flour 

1 tbsp cocoa powder 

1 tbsp chocolate protein powder 

1 tbsp brown sugar 

¼ tsp baking powder 

Pinch of salt 

2 tbsp coconut oil (melted) 

½ tbsp Saunders’ Malt Extract 

1 tsp vanilla extract 

1 tbsp chocolate chips

Method
  1. In a microwave-safe mug, combine flour, cocoa, protein powder, brown sugar, baking powder, salt, and chocolate chips. 

  2. Add milk, coconut oil, Saunders’ Malt Extract, and vanilla.  Stir until smooth. 

  3. Microwave for 60–90 seconds, until risen and set on top but still soft in the centre. 

  4. Allow to cool slightly then top with your choice of dollop cream, ice cream, Saunders’ Malt Extract and shaved chocolate.


Tip:

For a more even bake, cook in the air fryer for 8-10 minutes at 160°C.
