Tomato Halloumi Citrus Salad with Malt Dressing

Ingredients
Salad
150g Romesco sauce (store-bought, or see optional recipe below)
250g halloumi, sliced and grilled
300g heirloom beef steak tomatoes, halved
1 orange, segmented
½ cucumber, thinly sliced
½ red onion, pickled
Fresh mint leaves, to garnish
Malt Dressing
1 garlic clove, crushed
3 tbsp olive oil
8 tbsp citrus juice (orange or lemon)
1 tsp Saunders Malt Extract
1 tsp Dijon mustard
2 tbsp fresh herbs (parsley + thyme), finely chopped
Salt & pepper, to taste
Optional Homemade Romesco Sauce
2 roasted red capsicums (skins removed)
½ cup almonds, toasted
1 garlic clove
2 tbsp olive oil
1 tbsp red wine vinegar
1 tsp smoked paprika
Pinch of salt
Method
In a small bowl, whisk together garlic, olive oil, citrus juice, Saunders’ Malt Extract, Dijon mustard, herbs, salt, and pepper until well combined. Set aside.
Optional homemade Romesco Sauce: Blend roasted capsicums, almonds, garlic, olive oil, vinegar, paprika, and salt until smooth.
Spread Romesco sauce across the base of a serving plate or shallow bowl. Layer the tomatoes, cucumber, pickled red onion, and orange segments on top, building in 2–3 stacks for height.Add grilled halloumi slices over the top.
Drizzle generously with the malt dressing. Garnish with fresh mint leaves. Serve immediately.
